Why do doctors say "...in moderation"? WTF Does "in moderation" even mean?

Doctors are like a retail store. They tell you things and prescribe you things that helps their store or industry as opposed to what is really true in life. Even the daytime show called, 'The Doctors', advertises health-related products who are simply sponsors/advertisers of the show! I hate going to doctors, unless it is to check for facts. Blood tests are great because they test for actual issues and produce factual, scientific facts and evidence.

I recently read a Facebook post from a company page for a book I am reading called, 'The China Study'. The Facebook post stirred up discussion regarding: what is 'moderation'? and why is it okay for doctors to tell patients, "everything in moderation..." That is complete bull because moderation to one person might mean something completely different. What is 'moderation'? I looked up a few online dictionaries all saying the same of, "less than the extreme". Again, what is "less than"?

A little alcohol for an alcoholic?
Just a little bit of heroin?
Just a few drags of a cigarette once a week?
One glass of wine instead of 4 glasses of wine per night?
