Today marks a very important day. Today is Monday, August 1, 2016 and it is the first day of my HubSpot Sabbatical. Beginning today, and for the next four weeks, I plan to take advantage of this company perk, this gift, this freedom, to do many things that I always wished I had more time to do. And I will toss in there some things I just want to do.
Since moving to my current house in 2014, I gave birth to my adorable, handsome, smart, playful, intelligent, wonderful son, Mason. As much as I am completely and utterly in love with my baby boy, who recently turned two, he takes up nearly all my 'free' time. So during my 'Sab', Mason will still attend his beloved daycare/school/day-full-of-fun while Mommy takes time for herself. I do, however, plan to shorten his days at school a bit, but this is 'me time' and I feel it is well-deserved.
On this first day, it is now 7:35am and I have already prepared Mason's meals for the day, sent Mason off to school with Kevin, and made homemade coleslaw from scratch. Wait, what? Yup, I bought a head of cabbage earlier in the week and had some leftover bell peppers as well as all the other ingredients to make coleslaw, so that's what I did. I found this yummy recipe and went for it. It only took about 10 minutes to prepare and now it's sitting in the fridge letting the flavors dance. I already tried a bite and it's delish, so I am looking forward to eating it with my lunch today and the rest of the week.
